About La Negrita

Tucked away in the dramatic hills of Tolima, Colombia, Finca La Negrita is far from your average coffee farm. It’s a living laboratory, shaped by the vision of Mauricio Shattah, a former oncologist who now channels his scientific mind into cultivating extraordinary coffees.

The farm stretches from 1,800 to 2,350 masl, where a rare mix of high altitude, limited daily sunlight, and cool, misty evenings creates the perfect conditions for slow, even cherry maturation. This natural pacing unlocks a depth of sweetness and complexity that’s become the farm’s signature.

Mauricio’s approach is all about precision. Every detail—from fermentation methods to drying conditions—is dialed in with scientific intent. He’s a pioneer of nitrogen-flushed anaerobic processes, among other experimental techniques, which highlight the nuanced character of each varietal. Think expressive, vibrant coffees that are intensely fruity but exceptionally clean.

La Negrita is home to a stunning lineup of rare cultivars—Pluma Hidalgo, Gesha, Mokka, Laurina, Wush Wush, and beyond. These are not just grown, but thoughtfully nurtured and processed for peak expression, often in micro-lots destined only for a select few roasters around the world.

We’re proud to count Cloud Catcher among them. This release marks our first collaboration with Mauricio—and it’s a dazzling debut.
