About El Torito

Isacio Javier Albir is a third-generation coffee producer and the proud owner of several farms throughout the Dipilto region of Nicaragua. His journey into specialty coffee began with a strong commitment to enhancing and preserving biodiversity across his properties. Working closely with local agronomists, Isacio carefully manages soil health and promotes diverse flora, resulting in stronger plants and a more welcoming habitat for native wildlife.

Beyond environmental improvements, Isacio has dedicated significant effort to refining harvest and processing practices. He places particular emphasis on selective picking and meticulous processing methods to elevate cup quality.

Coffee farmer

Although his farms sit at 1,350 meters above sea level, the coffee cherries mature slowly due to the cool temperatures and dense shade canopy created by deliberately planted taller trees. This additional shade fosters remarkable complexity not typically found at this altitude.
