About the Pacamaras of Los Pirineos

Perched high on the slopes of the Tecapa volcano, Los Pirineos stands as one of El Salvador’s most legendary coffee farms.

Renowned for its spirit of innovation, the farm is home to the largest private coffee seed bank in the country, preserving more than 80 varietals and serving as a living archive of coffee genetics.

One of the farm’s defining features is a man-made plateau overlooking the volcano, where expansive drying beds stretch across the landscape. Here, coffees dry under a full day of sunlight, while steady westerly winds ensure slow, even, and consistent drying.

For over seven years, we’ve had the privilege of working closely with Los Pirineos, building a relationship grounded in trust and shared standards of quality.

Among the many varietals cultivated here, Pacamara continues to stand out. During this harvest, a suite of coloured Pacamaras immediately caught our attention on the cupping table—lots whose cherries naturally ripen in shades of orange, pink, and deep red.

Born in El Salvador as a hybrid of Pacas and Maragogipe, Pacamara finds a natural home here. This collection focuses on Pacamaras of shared lineage—revealing how the same genetic foundation can appear in distinct natural forms.
