About El Carrizal

El Carrizal is a notable coffee farm in San Andrés, Honduras, managed by María Lidia Cortez. It's especially known for growing the Pacas variety, a natural offshoot of the Bourbon family.

The Pacas cultivar, named after the Pacas family who identified it in El Salvador’s Santa Ana region in 1949, features a compact growth habit due to a single-gene mutation. This trait allows for denser planting and potentially higher yields, though it also makes the plant more vulnerable to coffee leaf rust.

In this lot, only the ripest cherries are carefully handpicked and processed naturally—dried slowly on raised beds over 16 to 21 days. This method brings out a clean, layered, and complex cup profile.

Thanks to María Lidia Cortez’s dedication to quality and sustainability, El Carrizal has earned a strong reputation in the specialty coffee scene.
